Join Susan Mckenna Grant in her vegetable garden to have a look at the day's harvest before moving into the kitchen to roll up your sleeves. You will prepare a multi-course meal based on a series of basic recipes you can take with you. No single dish contains more than six ingredients and all of our recipes are easy to execute at home. Learn how to adapt our specialties to your own seasonal ingredients, and how to put together a menu that will impress the most sophisticated of dinner guests.

Classes can be customized to suit special interests such as bread baking, making pasta, pastry, vegetarian cuisine, etc. Includes a multi-course lunch, a Petraia apron and a signed copy of Petraia Cucina.



Advanced Culinary

Learn about contemporary culinary techniques and familiarize yourself with professional kitchen equipment that is rapidly becoming available for your home. Find out the advantages of sous-vide cooking, how to improve quality with blast chilling and freezing, what a siphon and a Thermomix can do. Chef Susan McKenna Grant will discuss techniques like dehydration, fermentation and emulsification and explain how we use them to create texture, color and flavor. You'll learn how to make natural food coloring and she will share some of her current plating techniques.

Includes a multi-course lunch, a Petraia apron and a signed copy of Petraia Cucina.

This is no ordinary Tuscan cooking school. Spend an intimate five days with Susan McKenna Grant in Petraia's kitchens, gardens and orchards. Behind the wine curtain

A glimpse into the many stages in making a natural wine. Our agronomist, Dr. Marco Panichi, will share with you Petraia's commitment to the principles of biodynamic agriculture and the role it plays in producing wines of honesty and quality. You will taste our wines in various stages of their evolution and come to understand some of the complex considerations in our approach to winemaking.

Class lasts approximately 2 hours. Advance booking required. Minimum 2 and maximum 8 people.

This class is a professional tasting, and will be best appreciated by those who have a serious interest in winemaking.

Understanding Olive Oil

We’re fortunate that our in-house agronomist, Marco Panichi, is qualified to sit on the regional tasting committee that decides who in Tuscany gets to put ‘Extra Virgin’ on their label. We think what he knows is a revelation and we’ll be offering afternoon sessions in which he'll share it with you.
